A healthy, hearty pancake that's quick and easy to make.
Ingredients:
1 1/4 cups oatmeal (ground in food processor)
1/2 cup whole wheat flour (or white)
3 Tbs sugar
1/2 tsp baking powder
1/4 tsp baking soda
1/8 tsp salt
1 cup low-fat buttermilk (I use skim milk with a little lemon juice)
2 eggs
1 Tbs melted butter (or vegetable oil)
Directions:
Combine dry ingredients in a large bowl. Mix in wet ingredients. Cook on skillet until golden brown.
Garnish with fresh berries. Serve with syrup.
